Muscle cells (fibers) can be classified in many ways including color.
Red Fibers:
Those containing high levels of myoglobin and oxygen storing proteins have a dark/reddish appearance. Red muscle fibers tend to have more mitochondria and blood vessels than the white ones. The dark meat of the turkey, or chicken, is "red" or slow-twitch muscle.
White Fibers:
Those with a low content of myoglobin/mitochondria/cappilaries have a relatively white appearance. The white meat in turkey, or chicken, is "white" or fast-twitch muscle. |

I also found it helpful to know that because red fibers have lots of mitochondria (energy) that they are used for holding longer periods, yet take one lose on right? Well the down side is that they have little strength.
The white have lots of mitochondria (energy) and only able to hold up for small time. This makes sense. |
