Since the amino acid is now asparagine there isnt a OH for the sugar to bind and wouldn't that mean that the glycoprotein wouldnt form?

The passage established that the carbohydrate moiety can engage in either O- or N- glycosidic linkages depending on which molecule it is bonding with. Carbohydrates are often called polyhydroxyketones or aldehydes. The "polyhydroxy" part underlines that there are numberous -OH groups that can act as nucleophiles or more commonly, they can be involved in condensation/hydrolysis reactions.
